I’m so excited! Our good friends, Greg and Tina Burt, have started a blog.

They are missionaries with New Tribes Mission, currently serving in Thailand.

We’ve known the Burt family for 7 years and love them dearly. There were many tears when they left to serve in Thailand.

P365 – Day 91 Joshua’s Tortilla Soup

I’ve been meaning to try out this delicious soup ever since I read about it on Emily’s blog. I copied down the recipe and even passed it along to the EMF (E-Mail Family of aunts, friends and sister in law). I bought all the ingredients but the chicken broth. It’s hard to find a prepared chicken broth without sugar. So broth, no soup, that’s just how it goes.

Then I saw Dorothy had a vegetarianized version of the recipe on her blog. I always love reading Dorothy’s blog because she’s in England and uses words like “bunged” and “prithee” and “whilst.” You know those Brits, always trying to sound like they’re Shakespeare or something. Right now Dorothy and her family have Betty Puddles visiting them from New Hampshire. You can read about her trip to Hampton Court Palace here. Betty is a stuffed animal but don’t tell Dorothy and her family ’cause they think she’s real.

When I saw that Kristine had the soup posted on her blog as well (complete with pictures), I knew I just HAD to gather the rest of the ingredients and make this delicious sounding soup. I couldn’t let all of these women enjoy this recipe (bragging about it and eating all the leftovers) without getting in on the fun.

We had a Concert of Prayer at church this evening. As soon as I realized the event started at 5:30 pm (too early for dinner in this disorganized family), I knew it was a perfect chance to try out the Tortilla Soup. I asked Daniel to wash the crock pot and then gathered all the ingredients for Joshua (my chef du jour). He did a GREAT job of preparing the soup and everyone but Sarah and Rachel LOVED it. Somehow I gauged the salsa spicy factor just right for Tim and the children (ie NOT hardly spicy at all).

EMILY’S TORTILLA SOUP

28-32 oz. of chicken broth
2 cans refried beans
2 cans black beans, rinsed and drained (Tim isn’t crazy about black beans so I used 1 can of black beans and 1 can of navy beans)
2 c. cooked chicken, cubed (I cooked two chicken breasts in the microwave and then added it to the soup)
1 can corn, drained (we used 2 cans)
2 c. salsa (we used 1 cup of salsa and 1 can of diced tomatoes)
1 c. water (I forgot to add this)

2 c. shredded cheddar
tortilla chips
sour cream

Place first seven ingredients in a pot and simmer for ten minutes. Turn off heat, add cheese, and stir until melted. [I put ours in the crock pot on medium low for an hour or two]

Serve with tortilla chips, cheese and sour cream as desired.

Delicious! Thank you, Joshua, for making dinner.

P365 – Day 89 (A Girl & Her Cellphone)

I swapped two of the boys for two girls this afternoon. What a trade! It leaves Joshua a little outnumbered but that can’t be helped. The house is full of scampering and skipping about with little dolls in hand instead of wrestling and charging around with cars and swords.

The truly scary moment came in the evening when I snapped this series of pictures. Are these girls teenagers in the making?

Now to be fair Elise was on the phone saying good night to her mother and didn’t request to use the phone but still, all I could think about was these two cuties ten years from now.

It took me a little bit but I finally wrestled the phone from the girls and sent them off to bed. :) I’m not ready for teenager girls, yet!

Vacuum Give-Away

No, sorry to say, I’m not the one giving away a vacuum cleaner. I can’t spare mine. Every month or so it’s time to vacuum and I wouldn’t know what to do without it. Just kidding, the kids are regular vacuumers (is that a word?) and several of them can actually change the bag like a pro.

P365 – Day 87 (One pathetic picture)

It’s not that we had such a busy day. I could have taken more pictures. The children were brilliant and photogenic as always. We went places and did things – all potentially photo worthy.

Joshua made chocolate chip cookies for Sarah’s AWANA class – that would have been a great series of photos, featuring Chef Joshua (Baker Joshua?). Rachel and I ran some errands this evening. We could have taken some shots of Trader Joe’s (love that store) or the bulk food section at Fred Meyer. Julee and I went for a great walk this evening. Gorgeous sunset over the water.

Nope.
Nothing.
Nada.

All I ended up was this one, rather pathetic picture. I almost hate to post it, but I do have a Project 365 obligation to meet. Here it is. My picture for the day:

Kids at the park – even the title is rather pathetic.

I had a meeting at the park this afternoon with some awesome friends from the Women’s Retreat Team (we need those capital letters – helps us feel official). Normally I would spend most of the park time running (okay, walking) after the kids and taking fantastic pictures of their adorable cuteness, but this time I actually had to sit down and do some work. I guess my “awesome friends” don’t really understand the significance of this blog. Sigh. After the meeting I considered restaging the whole park/play time for the sake of some good pictures but I was so darn cold from sitting on the bench that I hurried us all home instead.

I can just see the little shake of his head and hear the scorn in Joshua’s voice as he reads this blog, “Only one picture, Mom, one?” Not quite a question, more a statement of disbelief. Such disappointment. I’m not sure how I will look him in the eye.

Tomorrow is another day, Joshua, that’s all I can say.
